hanging sausage

hello hello,
in its factory stock condition,
my electric h2o smoker has 2 wire grill racks.

i am thinking of rigging a wooden dowel to hang my
homemade sausage while its smoking.

or i might drill a hole in dome top and
insert removable gambrel to hang them on..

the question is ---
what are the ways to connect sausage into loops to hang on dowel ??
